    You did press the 'submit' button when you changed your settings and not the 'reset' didn't you?
    Other than that, you might need help from someone with a bit more knowledge on it than me.

    no i dont think its that, and every time i watch a topic if i post i have to tell it to watch again...

    is that normal?

    Ok I think you misuderstood these options.
    The "Always notify me of replies" option in your profile only changes if "Notify me when a reply is posted" option is checked by default or not when making a post.
    In other words if you'd like to add every topic you will post in to your watched topics list, then it's convenient to have the option in profile checked. This makes "Notify me when a reply is posted" option checked by default, so you don't have to click it every time.

    Changing the option in profile to Off will only affect your future replies.

    The "Notify me when a reply is posted" option is the same as "Watch this topic for replies".

    If you don't want to receive e-mails about a particular topic all you have to do is go to "View watched topics" page which is linked from the main forum page and there "unwatch" the topics of your choice.
